Heady aromatic waltz,
source of beautiful feelings.
The majority of
Chardonnay with 75%, charms us with its fine scents of apple, pear and candied
citrus fruits, coupled with refined woody notes.
Later, the nose unveils
its generosity with its caressing aromas of honey and pastries discreetly spicy
and roasted, characteristic sign of the 8 years of patient ageing on laths of
the bottles, with autolysis of the prise
de mousse yeasts.
Palate:
Pure opening, with a
remarkable elegance, reinforced by the timely stop of the malolactic
fermentation of the 58% of base wines vinified and aged in barrels, and by the
adjusted dosage with only 6 g/L of sugar added at disgorgement.
Joyful balance,
highlighted by touches of red and black fruits, signatures of the black
varietals (20% of Pinot Noir and 5% of Meunier).

For this Brut Vintage
2008 - Collection Privée, Sébastien Walasiak, cellar master of the Champagne
House Collet, was able to orchestrate with accuracy and sensitivity the meeting
of the best Crus of Champagne to offer us a well-defined Champagne,
unforgettable delicacy.

gastronomic meals, with a roasted chicken in salt crust and white truffle
polenta, for example.
Most ancient company of
