Original and bright

Aspect:
Golden and crystal-clear.
Fine bubbles.
Elegant bead of bubbles.
Nose:
Radiant, source of rare and endless pleasure,
thanks to the long period between disgorgement and shipment.
Sensual aromas of candied citrus fruits, apple, pear,
apricot and white flowers highlighted by an iodized and mentholated breath, touching signatures of the Chardonnay, exclusive varietal of the cuvée, harvested by hand in 2008.
Later, the joyful maturity of the Champagne is slowly unveiled, with
its generous scents of pastries and caramel, thanks to the patient ageing on laths of the bottles (8 years) before disgorgement, in the deep vaulted cellars of the House in Le Mesnil-sur-Oger.
Palate:
Pure and deep attack
reinforced by the adjusted dosage with only 3 g/L of sugar added at
disgorgement, supported by the chalky minerality, a life-giving breath of the
Grands Crus of the Côte des Blancs (Oger and Le Mesnil-sur-Oger).
The mouth becomes
caressing, definitely the result of the judicious fulfilment of the malolactic
fermentation of the base wines.
Tasty and deliciously
acidulous finish, supported by the silky and delicate effervescence.
Exceptional length on
the palate.
Delphine Cazals,
great-granddaughter of the founder, was able to produce with patience and
precision this Cuvée Vive - Extra Brut - Blanc de blancs - Grand Cru, to
enhance the purity of the Chardonnay of noble origins.
To taste from aperitif
to meal, to accompany prawns with purple artichokes, for example.
Founded in 1897 by
Ernest Cazals, cooper in Hérault, the Champagne House Cazals perpetuates with
love the family traditions. A vineyard of 9 hectares exclusively composed of
Chardonnay planted in the Grands Crus of the Côte des Blancs, cultivated with a
real desire to reduce the environmental footprint, is the source of an inspired
range of highly expressive Champagnes, following the example of the emblematic
Clos Cazals.
