caramel, marzipan and gingerbread, warm expressions of the well-defined
maturity of the cuvée obtained by 8
years of ageing on laths of the bottles, before riddling and disgorgement.
The Chardonnay,
exclusive varietal, chosen among the best plots of the Côte des Bar, then
establishes its elegance, between scents of white fruits compote, white flowers
and exotic fruits, supported by a life-giving iodized and mentholated breath.
Palate:
Pure opening, reinforced
by the rigorous selection of the best juices (cœur de cuvée) during the delicate pressing of the grapes, and by
the adjusted dosage with only 6 g/L of sugar added at disgorgement.
The mouth is revealed
lively, highlighted by the mineral tension and driven by the caressing effervescence.
Balanced, deep and tasty
finish.

For this Cuvée Charles
Blanc de Blancs Millésime 2008, last creation of the Champagne House Charles
Collin, Guillaume Cartier, cellar master, was able to accompany with sensitivity
grapes harvested by hand to offer us a Champagne with a strong character,
inspired interpretation of the great year 2008.
To taste from aperitif
to meal, with a mullet carpaccio and sea urchins, for example.
Settled in the heart of
the Côte des Bar, the Champagne House Charles Collin, certified ISO 22000
quality since 2012, continues his quest for excellence since 1952. Over 140
passionate wine growers cultivate with care the 330 hectares vineyard, composed
of 92% of Pinot Noir and 8% of Chardonnay. A range of highly expressive
Champagnes with a long ageing in cellar is produced with accuracy and marketed
in France, abroad and also in the shop of the House « La Belle Gabrielle »,
inaugurated in Essoyes in 2012.
