Aspect:
Gold, intense.
Fine and dynamic
bubbles.
Fine bead of bubbles.
Generous tears.
Nose:
Captivating aromatic
harmony.
The black varietals (80%
of Pinot Noir and 20% of Meunier) establish themselves, sensual, endless
variations around the radiant fragrances of red and black fruits compote,
punctuated by a spark of citrus fruits.
Later, touches of honey
delicately toasted reveal the maturity of the Champagne obtained by 6 years of
ageing of the bottles, during which wine slowly fed itself with yeast lees.
Palate:
Dense and balanced at
the opening, highlighted by the tasty minerality.
The mouth is slowly
unveiled, creamy caress, warm and enveloping, perhaps thanks to the judicious
fulfilment of the malolactic fermentation of the base wines.
We find again the scents
of red fruits already perceived at the nose, barely woody, thanks to the ageing
of a small part of the base wines in wood.
Finish supported by a
breath of freshness, punctuated by spices and supported by the silky
effervescence.
Very great length on the
palate.
With this Blanc de Noirs
- Zéro Dosage / Brut Nature between finesse and complexity, Nicolas Bouché,
engineer and œnologist, offers us the pure expression of the black varietals of
Champagne thanks to the absence of dosage (no sugar added at disgorgement).
To taste from aperitif
to meal, with pan-fried scallops and parmesan shavings, for example.
Founded in 1920 by Abel
Bouché, the Champagne House Bouché now directed by Nicolas Bouché, fourth
generation, cultivates with passion its 30 hectares vineyard of old plots (over
30 years old) spread over nine terroirs,
of which 75% in Premiers and Grands Crus. 250,000 bottles of Champagnes of a
rare finesse are produced each year with accuracy, between vinification by
batches, in small volumes and long ageing in the deep cellars of the House (4
to 10 years).
