Mythical champagne
Inimitable bottle, engraved with the emblem
of the brand.
Aspect:
White gold, crystal-clear.
Bubbles of a rare finesse.
Fine bead of bubbles.
Nose:
Captivating aromatic universe.
Outstanding farandole of fragrances of
candied red and black fruits, enhanced by seductive liquorice notes,
characteristic signs of the majority of Pinot Noir (92%).
Later, the fullness of the cuvée is unveiled, result of 10 years of
ageing of the bottles on laths before riddling and disgorgement, with generous
scents of brioche and cocoa highlighted by a touch of white fruits and citrus
fruits, refined signatures of the Chardonnay (8%).
Palate:
Vertiginous purity thanks to the preserved
acidity (2008 harvest), highlighted by the heady minerality, the one of the
chalk from 6 of the 8 historical Grands Crus of the house: Aÿ, Ambonnay, Bouzy,
Verzy and Verzenay for the Pinot Noir and Le Mesnil-sur-Oger for the
Chardonnay.
The mouth becomes caressing, with a gentle
and silky structure, reinforced by the dosage with 6 g/L of sugar added at
disgorgement.
At the end, we find again the red fruits
already perceived at the nose.
Endless length on the palate.
For this cuvée
La Grande Dame 2008, Dominique Demarville, cellar master of the Champagne house
Veuve Clicquot, resolutely gave prominence to the Pinot Noir, tempered by its
noble origins and by the Chardonnay, to reveal all its finesse and elegance.
Gastronomic
champagne par excellence, with a sea bream tartar and lemon granita, for
example.
