Aspect:
Golden.
Delicate bubbles.
Brilliant limpidity.
Nose:
Sensual and endless aromatic breath.
The Chardonnay, exclusive varietal, unveils
its refined elegance with touches of citrus fruits, mirabelle plum, apple, pear
and white flowers, driven by an iodized breath.
The gourmet fragrances of brioche, honey and
marzipan take us, characteristic signs of the fullness of the champagne
obtained by 10 years of ageing of the bottles, with patient autolysis of the prise de mousse yeasts.
Palate:
Splendid purity at the opening, definitely
the result of the selection of the first juices (cuvée) during the soft pressing of the grapes, enhanced by an
outstanding vital force, the one of the chalk of the great terroirs.
The mouth becomes radiant, sensual delicacy
supported by the generous dosage with 9 g/L of sugar added at disgorgement.
Silky and warm finish, punctuated by subtle
spices, definitely obtained by the ageing of 5% of the base wines in oak barrels,
for 4 months.
Remarkable length on the palate.
For this 2007 edition of Comtes de Champagne
Blanc de Blancs, Loïc Dupont, cellar master of the Champagne house Taittinger,
was able to reveal patiently the heady soul of the best Crus of the Côte des
Blancs, in the deep cellars of the house, to sign a well-defined champagne,
with insolent youth.
To taste from aperitif to meal, with
medallions of sea bass and minced artichoke, for example.
Fiercely attached to champenois values, Pierre-Emmanuel Taittinger, his daughter
Vitalie, artistic director and muse of the brand and his elder son Clovis,
export director, have been perpetuating with daring the inimitable style of the
house. Thanks to the 288 hectares vineyard, cultivated in the greatest respect
of the environment, without using herbicides, the Champagne house Taittinger
crafts rare champagnes, variations inspired around great terroirs of Chardonnay.
