Organic champagne
Original and luxurious bottle.
Aspect:
Dense gold, brilliant.
Delicate bubbles.
Reserved corolla of bubbles.
Nose:
Radiant aromatic compilation, definitely
enabled by a controlled production with a very low dosage of SO2.
The Pinot Noir, exclusive varietal, reveals
all its generosity with fragrances of candied red and black fruits, underlined
by subtle spices, perhaps the characteristic sign of the vinification and the
ageing of 50% of the base wines in oak barrels.
Well-defined maturity, with touches of honey
and pastries, result of 10 years of ageing on laths of the bottles with corks
held by a clip, before riddling and disgorgement on the spot.
Palate:
The pure attack enhanced by the
adjusted dosage with only 2.6 g/L of sugar added at disgorgement, gives way to
an outstanding vitality, highlighted by the vibrant minerality of the
clay-limestone terroir of Courteron.
We find again the reserved power
of the Pinot Noir, warm and ample, and the candied red and black fruits already
perceived at the nose, gathered in an enveloping harmony underlined by
outstanding spirituous notes.
Sensual finish, supported by a
gentle effervescence.
Endless length on the palate.
With this Boléro Extra Brut 2006,
Jean-Sébastien Fleury was able to comprehend with sensitivity the soul of the
2006 harvest, with absolute respect for grapes, to reveal all its captivating
charm.
Driven by a strong willingness to respect nature and soil life, faithful
to the ecological values of their father Jean-Pierre Fleury, first champenois wine grower converted to
biodynamy in 1989, Jean-Sébastien, Morgane and Benoît Fleury cultivate with
care their 15 hectares vineyard, certified Ecocert, Demeter and Biodyvin. A
gentle and inspired œnology, with respect for cosmic rhythms, gives birth each
year to around 200,000 bottles of a range of rare champagnes.
