Refined bottle with a sophisticated elegance.
Aspect:
Gold, dense and brilliant.
Delicate bubbles.
Fine bead of bubbles.
Nose:
Splendid, it takes us into a heady aromatic
waltz.
Initially sensual, with gourmet scents of
pastries, and then of roasted coffee, result of 12 years of patient ageing of
the wine in bottles, on lees of prise de
mousse yeasts, before riddling and disgorgement.
Later, the Chardonnay, exclusive varietal, is
unveiled, first reserved and then more audacious, with outstanding touches of
fig, apple and pear compote, candied citrus fruits, apricot and grape,
deliciously mentholated.
Palate:
Pure
attack, vertiginous, definitely the characteristic sign of the rigorous
selection of the first juices (cuvée)
during the pressing of the grapes, enhanced by the tasty minerality of the
chalky terroirs.
The
endless generosity is then unveiled, improbable and captivating balance
underlined by the 7 g/L of sugar added during the dosage.
Life-giving
finish, barely spicy.
Vertiginous
length on the palate.
With this unforgettable cuvée Blanc de Blancs 2005, Elisabeth
Sarcelet, cellar master of the Champagne house Castelnau, signs a remarkable
interpretation of the Chardonnay in the best Crus of Champagne, between Mountain of
Reims and Côte des Blancs (Trépail, Ludes, Villers-Marmery, Verzy,
Tauxières-Mutry, Rilly-la-Montagne, Chouilly and Le Mesnil-sur-Oger).
Resolutely
forward-looking, around 760 wine growers, united and passionate, put their
expertise in the service of their 900 hectares vineyard planted in 149 of the
best Crus of Champagne. A team of audacious œnologists, around Elisabeth
Sarcelet, creative cellar master, accompanies grapes harvested by hand at
perfect ripeness and pressed with gentleness, to craft each year around 800,000
bottles of great wines from Champagne, ripened for a long time in the cellars
of the Champagne house Castelnau founded in 1916.
