Ploughing: viticultural practice consisting in
working the soils. Ploughing has nearly been abandoned in viticulture in the
70s and 80s in favour of complete weeding. However, with the progressive
prohibition of the different weedkillers, more and more wine growers turn to
this traditional practice. The wine
grower who ploughs destructs the superficial roots in favour of the deep roots.
The champagne obtained will thus be more marked by its original terroir.
