Mass selection of the
vines: it is the traditional
and ancestral method to select the vine stocks that will be planted on a plot.
The young vine plants are produced from several stocks, chosen for their
ability to produce a quality champagne. The
wine grower who chooses mass selection for the planting of his lands often does
not reach the same yields than with clone selection, but the stocks of his
plots will be all different and he will get more complex and more concentrated champagnes.
