Manual grape harvest: Champagne is the only wine-growing
region where manual grape harvesting is compulsory, enforced by regulations.
Only here it is forbidden to crush the grapes before pressing, to prevent free
running and oxidation of the juices and colouration of 70% of the juices
obtained from black varietals (Pinot Noir and Meunier) cultivated in the
Champagne region. The harvesters can also select bunches of grapes. The winegrower can select the best grapes
and guarantee the quality of his champagne.
