Clarification: intervention which involves adding a
neutral substance, to slowly get rid of a number of particles in wine, and thus
stabilise it. Each producer of champagne use an automatic clarification with
bentonite when they add the riddling (or bottling) agents while drawing
(bottling). The producer can use a
clarification on the base wines, especially with fish glue and silica gel.
Thus, he obtains more brilliant and fine wines.
