Chardonnay: around 30% of the vineyards. Mainly
cultivated in the Côte des Blancs. A champagne blanc de blancs is produced
solely with Chardonnay. It gives elegance, finesse, liveliness, minerality and
complexity, with aromas of citrus fruits, apple, pear, white flowers and
hazelnut. Ageing on laths of a champagne blanc de blancs gives it toasted
nuances, together with butter and brioche. The
producer, by deciding to favour Chardonnay in the blending, can change the
personality of his champagne.
