Luxurious presentation. We find again the three flying
geese on the cap, emblem of the house.
Aspect:
Gold, brilliant.
Fine and dynamic bubbles.
Fine bead of foam and generous tears.
Nose:
Sensual bouquet.
The Chardonnay, exclusive varietal, reveals
its endless grace with its scents of candied citrus fruits, apple, pear and
white flowers, punctuated by notes of exotic fruits delicately iodized and
mentholated.
The joyful maturity is then slowly unveiled
with its touches of pastries, barely spicy, characteristic signs of the
autolysis of the prise de mousse
yeasts during the 5 years of ageing on laths.
Palate:
Dazzling vitality at the opening, coupled
with the mineral purity of the chalk with belemnites and enhanced by the
adjusted dosage with 6 g/L of sugar added at disgorgement.
The bright tension takes us to give way to an
enveloping gentleness, reinforced by the judicious fulfilment of the malolactic
fermentation of the base wines.
Radiant finish, with a heady bitterness
underlined by spices.
Remarkable length on the palate.
With this Grand Bouquet 2012 - Grand Cru -
Blanc de Blancs, Jean-Pierre Vazart was able to comprehend with sensitivity the
soul of the vintage to sign a vertiginous interpretation of the Chardonnay in
the Grand Cru of Chouilly.
To taste from aperitif to meal, with duckling
aglets and quince chutney, for example.
Jean-Pierre Vazart has been perpetuating
since 1995 the endless quest for the original flavours started in 1954 by his
grandparents, Louis and Marie Vazart-Coquart. The 11 hectares vineyard, in
Chouilly, Grand Cru of the Côte des Blancs, is cultivated in the greatest
respect of the environment (certified Haute Valeur Environnementale since 2012,
Sustainable Viticulture in Champagne since 2015 and in the process of
conversion to organic viticulture). The highest quality of the grapes and a
controlled œnology are the source of the 70,000 bottles of touching champagnes
produced each year.
