Aspect:
Gold, brilliant.

Nose:
Radiant aromatic harmony.
Voluptuous scents of caramel, roasted almond
and hazelnut, outstanding characteristic signs of the reserve wines (33%) obtained
by continuous blending (solera) of base wines from the first juices (cuvée), purer, during the pressing of
the grapes.
The majority of Pinot Noir (75%) then
establishes its generosity with aromas of candied red and black fruits,
underlined by touches of apple and pear compote, delicately reflecting the
Chardonnay (25%).
Palate:
Dense opening.
Joyful explosion of flavours highlighted by
an ample and enveloping warmth, definitely reinforced by the judicious
fulfilment of the malolactic fermentation of the base wines, and by the
adjusted dosage, with 8 g/L of sugar added at disgorgement.
Tasty finish and mineral, driven by subtle
spices.
Great length on the palate.
For
this Brut Tradition, Hélène Leboeuf and her father Vincent were able to compose
the inspired blending of the base wines from of the great Marne Valley (Aÿ,
Avenay-Val-d’Or and Mutigny), vinified with sensitivity, and then clarified
with egg white, without filtration, to offer us a champagne of pleasure and
emotion.
Ideal
for aperitifs among friends, or during a meal, with a pike mousseline, autumnal
flavours and scents, for example.
Heir
of five generations of wine growers, Hélène Leboeuf, assisted by her father
Vincent, is a part of the long family tradition of welcome and friendliness,
around the old press, in Aÿ, in the half-timbered house from the XVIth
century built for the king Henri IV, to better share her passion for champagne.
Resolutely committed to a responsible and environmentally friendly approach,
she put her dynamism in the service of her 4.70 hectares vineyard, to craft
each year around 25,000 bottles of radiant champagnes.
