Sober and refined presentation, luxurious.
Aspect:
Gold, solar.
Fine and dynamic bubbles.
Delicate bead of foam, persistent after
service.
Nose:
Sensual and radiant aromas.
Joyful maturity, result of 4 years of patient
ageing on laths of the bottles before riddling and disgorgement, with notes of
caramel and roasted coffee supported by subtle woody notes obtained by the
dosage with a traditional expedition liqueur produced with wines aged in
barrels.
The Chardonnay (80%), from the terroir of Venteuil, is unveiled with
scents of apple, pear, citrus fruits and almond, soon driven by fragrances of
red and black fruits, signatures of the Pinot Noir (20%) selected in
Passy-Grigny.
Palate:
Delicious tension at the opening, obtained by
the rigorous selection of the first juices (cuvée),
purer, during the soft pressing of the grapes.
The liveliness gives way to a gentle and
intense warmth, reinforced by the fulfilment of the malolactic fermentation of
the base wines and by the dosage, with 7 g/L of sugar added at disgorgement.
Tasty finish, punctuated by delicate spices, enhanced
by the vibrant minerality.
Great length on the palate.
For this Grande Cuvée, Pascal Cez, wine
grower, was able to blend vintages (60% from 2013 and 40% from 2012) to compose
a balanced champagne, source of intense pleasure.
To taste from aperitif to meal, with roasted
frog legs, for example.
Third generation of wine growers established in Passy-Grigny, in the
heart of the Marne Valley, Pascal Cez, assisted by his son Emeric since 2012,
cultivates his 7 hectares vineyard spread over the beautiful terroirs of Passy-Grigny (5 hectares)
and Venteuil (2 hectares), in the greatest respect of the environment. He
vinifies with passion grapes of the three champenois
varietals (57% of Meunier, 36% of Pinot Noir and 7% of Chardonnay), harvested
by hand at perfect ripeness, to produce each year around 35,000 bottles of
quality champagnes.
