Luxurious and traditional bottle.
Aspect:
Gold, brilliant.
Fine bubbles.
Fine bead of foam, persistent.
Nose:
Intense and sensual.
Fragrances of apple, pear, citrus fruits, white flowers
and exotic fruits underlined by a tinge of liquorice, signatures of the
Chardonnay, exclusive varietal of the champagne.
Later, the aromas of caramel, honey and beeswax reveal
the radiant maturity of the cuvée,
result of 3 years of ageing on laths of the bottles, with patient autolysis of
the prise de mousse yeasts in the
deep chalk cellars of the house.
Palate:
Joyful purity, obtained by the soft pressing
of the grapes in a traditional press, reinforced by the timely stop of the
malolactic fermentation of the base wines.
The mouth becomes silky, ample and generous,
definitely thanks to the 7 g/L of sugar added during the dosage after
disgorgement, highlighted by the bright minerality and by the soft
effervescence.
Dense finish, balanced, barely spicy and
coupled with a delicious bitterness.
Endless length on the palate.
For this Cuvée Louïs Philippe, touching homage to his
grandfather, Florent Laval, its producer, was able to orchestrate the meeting
of vintages (50% from 2014, 25% from 2013 and 25% from 2012) to offer us an
original blanc de blancs, inspired
interpretation of the Premier Cru terroir
of Cumières, in the Marne Valley.
To taste as an aperitif or during a
meal, with snails in a puff pastry, for example.
In Cumières, Florent Laval,
passionate wine grower and his wife Régine cultivate their south-facing
vineyard of 4.40 hectares, spread over the Crus of Cumières, Damery and
Hautvillers. Grapes of the three champenois
varietals (53% of Pinot Noir, 24% of Chardonnay and 23% of Meunier) are
harvested by hand, nice ripe, and then patiently vinified in small volumes
separating the plots, to produce each year around 20,000 bottles of authentic
champagnes.
