Aspect:
Golden
and
bright.
Fine bubbles.
Nose:
Radiant aromatic complexity,
signature of the meeting of the majority of Pinot Noir (70%) and of the Chardonnay
(30%), carefully harvested by hand.
Later, touches of dried fruits, barely
roasted, show the beautiful maturity of the cuvée, obtained by 5 years of ageing on laths before riddling and
disgorgement.
|
Palate:
Brilliant tension, at the opening, obtained by the minimalist dosage
with only 1,6 g/L of sugar added at disgorgement.
The mouth reveals a remarkable presence, almost structured thanks
to the Pinot Noir and underlined by a delicious minerality.
Great length on the palate.
With this cuvée Prologue, Vincent Van Waesberghe, cellar master, signs an inspired
interpretation of the Grand Cru of Verzenay.
