Numbered bottle, sober and harmonious, decorated with an
original label recalling the traditional slates used in cellars on the piles of
bottles.
Aspect:
Gold, brilliant.
Refined bubbles.
Fine bead of foam.
Nose:
Intense and gourmet.
Generous compilation of red and black fruits
enhanced by an aniseed and mentholated breath, outstanding, signatures of the
Meunier, exclusive varietal carefully harvested by hand in 2009.
Later, the nose is revealed sensual with its
gentle scents of honey and beeswax delicately toasted, enhanced by a spark of
spices, characteristic signs of seven long years of ageing of the bottles
before riddling and disgorgement.
Palate:
Lively opening thanks to the selection of the
first juices (cuvée) during the
pressing of the grapes, to the absence of malolactic fermentation of the base
wines and to the accurate dosage with 5 g/L of sugar added at disgorgement.
The mouth then reveals a joyful balance,
underlined by the subtle minerality.
Smooth and creamy finish.
Very great length on the palate.
With this cuvée Lysandre Vintage 2009 - Blanc de Meuniers - Extra Brut from
the range « Millésimes & Confidentielles », Jérôme
Niziolek-Demière, artisan wine grower, was able to compose an elegant and
complex champagne, touching ode to the Meunier.
To taste from aperitif to meal,
with a roasted wild hake fillet, chicory, caramel and orange, for example.
Since the foundation of the Champagne
house A & J Demière in 1936 by Fernand Demière, three generations have
succeeded one another to craft a 8 hectares vineyard in Fleury-la-Rivière.
Nowadays, Audrey Demière and Jérôme Niziolek-Demière have equipped themselves
with new facilities gathering vinification and customers reception, in a
magnificent setting with breathtaking view over the Marne Valley, to be able to
reach their potential producing each year around 70,000 bottles of rare champagnes,
of which the particular range « Millésimes & Confidentielles ».
