Guide VERON des Champagnes 2019
(around
25 euros per bottle)
Original and luxurious bottle, with generous forms.
Aspect:
Solar.
Fine bubbles.
Fine bead of foam, persistent.
Nose:
Captivating aromatic breath, enhanced by the
vinification and the ageing of 15% of the base wines in oak barrels.
Radiant aromas of red and black fruits,
barely spicy, outstanding signatures of the Pinot Noir, exclusive varietal of
the cuvée, chosen in the best plots
of the house.
Later, the maturity of the champagne is
unveiled, result of four years of patient ageing on laths of the bottles before
riddling and disgorgement, with scents of caramel and roasted coffee,
highlighted by improbable touches of apple and pear.
Palate:
Tonic liveliness at the opening, obtained by
the rigorous selection of the first juices (cuvée)
purer during the pressing of the grapes and driven by the intense minerality of
the Grand Cru of Verzenay.
Then the enveloping warmth becomes a caress,
coupled with delicate woody notes thanks to the fulfilment of the malolactic
fermentation of the base wines and to the adjusted dosage, with 7 g/L of sugar
added at disgorgement, as an expedition liqueur aged in barrels.
Great length on the palate.
With this Cuvée Exception Brut Blanc de Noirs
Millésime 2012, Michaël Francinet, wine grower, offers us a remarkable
interpretation of the great year 2012, in an exceptional terroir.
To taste from aperitif to meal, with a
