Numbered, sober and neat bottle. Back label full of
information. Name evocative of the pleasure continuously renewed.
Aspect:
Golden, solar.
Refined bubbles.
Promising tears.
Nose:
Heady power and endless complexity.
Radiant fullness with captivating scents of
pastries, honey, cocoa and roasted coffee, results of 146 months of ageing of
the bottles before disgorgement.
Later, the aromas of white fruits and candied
citrus fruits, barely mentholated, signatures of the Chardonnay (80%), lovingly
mingle with notes of strawberry jam, delicious characteristic signs of the
Meunier (20%).
Palate:
Tasty vitality at the opening, obtained by
the adjusted dosage with only 8 g/L of sugar added at disgorgement.
The mouth becomes caressing, creamy and warm,
thanks
to scheduled « poignettages » of the bottles on laths, since 2014, to
enable the wine to better feed on lees of prise
de mousse yeasts.
Balanced finish, punctuated by delicate
spices.
Vertiginous length on the palate.
With this reserved cuvée Bis Repetita Placent Vintage 2005 (1,200 bouteilles),
Geoffrey Delouvin, artisan wine grower, was able to accompany with sensitivity
the outstanding symbiosis between Chardonnay and Meunier, harvested by hand in
2005 in his best plots of old vines.
To taste from aperitif to meal, with a duck foie gras grilled with roasted figs, for
example.
From a long line of wine
growers and coopers, Geoffrey Delouvin now presides over the destiny of the
Champagne house Delouvin Nowack, founded in 1949. In a continuing effort to
reduce the environmental footprint and to respect the soils, he cultivates his
7.3 hectares vineyard with a good southern exposure, mostly planted with
Meunier, in Vandières in the Marne Valley. A gentle and creative œnology
reveals the particular personality of each plot of the wine estate to craft
each year 50,000 bottles of inspired champagnes.
