Guide VERON des Champagnes 2019
(around
23 euros per bottle)
Sober and luxurious bottle.
Aspect:
Golden
and bright.
Fine
and brilliant bubbles.
Fine
bead of bubbles persistent after service of the flute.
Nose:
Radiant
and captivating first nose, thanks to the long period (1 year) between
disgorgement and marketing.
Sensual
aromas of honey, caramel and beeswax, coupled with joyful notes of roasted
coffee and subtle spices, translations of the well-defined maturity of the champagne
obtained by 3 years of patient ageing on laths of the bottles, before riddling
and disgorgement.
Later,
the Pinot Noir, exclusive varietal of the champagne, carefully harvested by
hand in low yield plots of Boursault, reveals all its generosity with scents of
red and black fruits compote.
Palate:
Chiselled opening, thanks to the rigorous
selection of the first juices (cuvée),
purer, during the soft pressing of the grapes, underlined by the absence of
dosage (no sugar added during the disgorgement of the bottles).
The power driven by a vibrant minerality is
then unveiled, reserved, tasty caress obtained by the judicious fulfilment of
the malolactic fermentation of the base wines.
Dense finish.
Great length on the palate.
With this Millésime 2012, Bruno de Villepin
offers us a radiant champagne, audacious blending between force and vitality.
To taste as an
aperitif or during a meal, with a turbot and aniseed fennel, for example.
Established in
Boursault, in the Marne Valley, Bruno de Villepin has been perpetuating since
1999 the family traditions handed down by nine generations of passionate wine
growers. He cultivates its vineyard of 7 hectares in the greatest respect of
the environment (certifications Haute Valeur
Environnementale and Sustainable Viticulture in Champagne), composed of 50% Meunier,
35% Chardonnay and 15% Pinot Noir. A vinification in small volumes, to separate
each of his plots, gives birth to touching champagnes, marketed since 2013.
