Aspect:
White gold, crystal-clear.

Nose:
Outstanding compilation of radiant
fragrances.
Aromas of candied red and black fruits and
citrus fruits, barely spicy, heady signatures of the Pinot Noir (85%) mainly
chosen in the Grands Crus of Aÿ and Tours-sur-Marne and in the Premier Cru of
Hautvillers, and of the Meunier (15%), mostly from Hautvillers.
Later, the maturity of the cuvée is unveiled with sensual touches
of cocoa and roasted coffee, characteristic sign of the 3 years of ageing on
laths of the bottles.
Palate:
Lively attack, result of the selection of the
first juices during the pressing of the grapes (cuvée).
The endless generosity is then revealed,
subtly toasted, definitely thanks to the vinification and to the ageing with bâtonnages of 10% of the base wines of
Pinot Noir in barrels (3 to 6 years old), without malolactic fermentation.
Ample and balanced finish, reinforced by the
accurate dosage with 8 g/L of sugar added at disgorgement.
Endless length on the palate.
For this Blanc de Noirs,
Sébastien Walasiak, cellar master of the Champagne house Collet, highlights the
meeting of 10 great terroirs of
Champagne, with 50% of Grands Crus and 50% of Premiers Crus, to enhance the
purity and the generosity of the black varietals with white juice.
To taste from buffet dinner to
meal, with a suckling lamb from Aveyron, rubbed with fresh garlic and linden
juice, for example.
First cooperative of Champagne
founded in 1921, the Champagne house Collet was able to remain true to its
pioneering spirit. After equipping itself in 2004, in Oger, with new modern
facilities, extended in 2011, for the production of its champagnes, it built in
2014, in Aÿ, La Cité du Champagne, unique historic and cultural site entirely
dedicated to wines from Champagne. While its original range of champagnes
logically establishes itself in the world of gastronomy, the Champagne house
Collet is preparing to celebrate with confidence its hundredth anniversary.
