Original and refined presentation.
Aspect:
Gold, crystal-clear.
Extremely fine bubbles.
Delicate bead of foam.
Nose:
Radiant aromatic farandole, source of intense
pleasure.
Fragrances of red and black fruits and
kirsch, subtly spicy, signatures of the majority of Pinot Noir (80%),
highlighted by a spark of white fruits and citrus fruits thanks to the
Chardonnay (20%).
Later, the cuvée reveals its maturity with gentle touches of honey and
caramel, expressions of the long ageing of the bottles on laths, with patient
autolysis of the prise de mousse
yeasts before riddling and disgorgement.
Palate:
Deep attack highlighted by the outstanding
minerality of the chalk.
Sensual and warm balance, punctuated by
spices (pepper, liquorice and cinnamon) and driven by a lively effervescence.
Beautiful vitality at the end, reinforced by
the timely stop of the malolactic fermentation of the base wines and especially
by the carefully considered dosage, with only 2 g/L of sugar added at
disgorgement.
Endless length on the palate.
For this cuvée
Extra Brut, Alexandre Cornot, Chief Executive Officer of the house, selected
with talent the best grapes, harvested by hand in 6 Grands Crus: Aÿ in the
Marne Valley, Bouzy and Ambonnay in the Mountain of Reims, and Oger, Le
Mesnil-sur-Oger and Cramant in the Côte des Blancs, to sign an unforgettable
champagne.
To taste from aperitif to meal, with quail
thighs and herbs, for example.
A touch of madness and imagination, with a
great passion for Champagne, rigour combined with elegance and boldness, these
are the ingredients which led Alexandre Cornot to achieve the impossible in
2008: to create his own Champagne house. He put his creativity in the service
of the grapes, mainly Chardonnay, chosen in the best terroirs of Champagne, to establish his casual and spontaneous
style, and to produce each year with his team around 250,000 bottles of fresh
and elegant champagnes.
