Guide VERON des Champagnes 2020
(around 31 euros per bottle)
Eminent presentation, in an harmonious bottle with generous forms,
engraved with the signature of the house.
Aspect:
Golden
and bright, coupled with reserved emerald glints.
Refined
bubbles.
Delicate
bead of foam.
Nose:
Sensual
and endless aromatic bouquet.
The
scents of white fruits and citrus fruits, highlighted by an iodized and
mentholated breath, signatures of the majority of Chardonnay (75%), gently
interlace the notes of candied red and black fruits, heady characteristic signs
of the Pinot Noir (25%).
Later,
touches of honey, pastries and then cocoa and roasted coffee reveal the
fullness of the cuvée, result of 7
years of patient ageing of the bottles on laths, in the cellars of the house,
before riddling and disgorgement.
Palate:
Splendid
purity at the opening, result of the rigorous selection of the very first
juices (tête de cuvée) during the
soft pressing of the grapes carefully harvested by hand, in 2011, in the best
plots of the wine estate.
The
mouth becomes caressing, driven by the creamy effervescence, reinforced by the
9 g/L of sugar added during the dosage, at disgorgement.
Lively
finish, deliciously acidulous and subtly spicy (white pepper, vanilla and
cinnamon).
Remarkable
length on the palate.
With
this Cuvée Marguerite Millésime 2011 created in homage to his grandmother,
Franck Vollereaux offers us a well-defined champagne, source of rare emotions.
To
taste from aperitif to meal, with a rack of pork and spices, for example.
