The
Chardonnay, exclusive varietal of the cuvée,
is slowly unveiled, with delicate scents of candied citrus fruits, apple and
pear compote, supported by a breath of freshness, iodized and mentholated.
Later,
sensual fragrances of honey and caramel reveal the emerging maturity of the cuvée obtained by 3 years of ageing on
laths of the bottles.
Palate:
Beautiful
vitality at the opening, reinforced by the adjusted dosage with 5 g/L of
sugar added at disgorgement.
Bright
minerality, the one of the chalk of the majority of Grands Crus (28% Chouilly,
18% Cramant and 10.5% Oger) and Premiers Crus (34% Cuis and 9.5% Vertus), in
the Côte des Blancs.
Lively
finish, rocked by a creamy effervescence with a rare finesse, characteristic
sign of a particular prise de mousse,
called « petite mousse »,
with only 20 g/L of sugar (instead of 24) added when bottling, historical champenois practice.
Great
length on the palate.
With this Brut « Gastronome » 2014, Olivier and Didier Gimonnet put
their talent of wine growers in the service of the elegance of the Chardonnay
to sign a great Champagne wine.
Champagne for all occasions, as an aperitif or
to taste during a meal.
Heirs
to over 2 centuries of wine traditions, Olivier and Didier Gimonnet age
their reserve wines in bottles at a pressure of 1.5 bar (quart de mousse) to compose exceptional
champagnes, variations inspired around the Chardonnay. Driven by the real
desire to reduce the environmental footprint, they cultivate with care the
28 hectares of their vineyard classified as Grand Cru (12 hectares,
of which 9 in the heart of Grand Cru) and Premier Cru (16 hectares) in the
Côte des Blancs, to ensure an impeccable quality of the grapes and enhance the
soul of each plot.
