Elegant bottle. Original label, evocative of the formal gardens of the
Regency period dear to the house.
Aspect:
Golden
and brilliant.
Delicate
effervescence.
Fine
bead of bubbles.
Nose:
Generous
aromatic waltz.
The
radiant fragrances of nice ripe red and black fruits, punctuated by subtle
spices, signatures of the majority of Pinot Noir (80%), gently interlace the
outstanding touches of white fruits and hazelnut, characteristic signs of the
Chardonnay (20%).
The
maturity of the champagne gently establishes itself with scents of pastries and
then of roasted coffee, results of 4 years of ageing on laths of the bottles,
before riddling and disgorgement.
Palate:
Deliciously
acidulous opening thanks to the timely stop of the malolactic fermentation of
the base wines and to the minimalist dosage with only 2 g/L of sugar added
at disgorgement.
The
mouth becomes delicacy, underlined by a graceful effervescence.
Tasty
finish, enhanced by the brilliant minerality of the chalky terroirs.
Very
great length on the palate.
For this cuvée
Extra Brut, Alexandre Cornot, Chief Executive Officer of the house, was able to
orchestrate the meeting of 6 Grands Crus, Aÿ in the great Marne Valley,
Bouzy and Ambonnay in the Mountain of Reims, Oger, Le Mesnil-sur-Oger and
Cramant in the Côte des Blancs, to unveil all their joyful elegance.
To taste as an aperitif or during festive meals,
with perch fillets and citrus fruits, for example.
A touch of madness and imagination, with a great
passion for Champagne, rigour combined with elegance and boldness, these are
the ingredients which led Alexandre Cornot to achieve the impossible in 2008:
to create his own Champagne house. He put his creativity in the service of the
grapes, mainly Chardonnay, chosen in the best terroirs of Champagne, to establish his casual and spontaneous
style, and to produce each year with his team around 250,000 bottles of fresh
and elegant champagnes.
