Aspect:
Deep and
bright colour, result of a 4 days maceration.
Dynamic
effervescence.
Fine bead
of foam, persistent.
Nose:
Generous
delicacy, driven by outstanding aromas of red and black fruits (cherry,
raspberry, strawberry, blackcurrant, blackberry and blueberry) coupled with
delicate spirituous touches, sensual characteristic signs of the Pinot Noir,
carefully harvested by hand in 2016, of which 20% are crushed by feet and 80%
are put into vats (whole grapes) for a semi-carbonic maceration.
Later,
the subtle scents of spices and roasted touches show the emerging maturity of
the champagne obtained by the ageing on laths of the bottles, before riddling
and disgorgement on the spot.
Palate:
Beautiful
presence at the opening, enhanced by the accurate dosage with 10 g/L of
cane sugar added at disgorgement.
The mouth
is revealed balanced, fleshy and warm, supported by a round and silky structure
and highlighted by a soft effervescence.
We find
again on the palate the red and black fruits already perceived at the nose, in
a dense finish, deliciously acidulous and mineral, punctuated by spices.
Remarkable
length on the palate.
With this
Brut Rosé, Benoît Tassin offers
us a high level champagne rosé made
by maceration, source of rare emotions, completion of a perfectly controlled
vinification.
Ideal as
an aperitif or during a meal, with a red fruits crumble, for example.
While his son Clément and his
daughters Cyrielle and Auriane progressively become involved in the wine estate
and old bottles museum (certified Vineyards and Discoveries) activities, Benoît
Tassin, heir to 7 generations of wine growers, cultivates his 4.75 hectares
vineyard composed of 14 plots established in Essoyes and Celles-sur-Ource, to
produce each year with accuracy around 16,000 bottles of joyful champagnes.
