The
Chardonnay, exclusive varietal of the champagne, establishes itself with its
subtle scents of apple, citrus fruits, yellow fruits and white flowers.
Later,
the nose unveils all its generosity with notes of pastries, characteristic
signs of the maturity of the cuvée
obtained by 3 years of ageing on laths of the bottles.
Palate:
Marked
attack, reinforced by the timely stop of the malolactic fermentation of 20% of
the base wines and by the adjusted dosage with 5.5 g/L of sugar added at
disgorgement, underlined by the bright minerality of the sandy and
clay-limestone terroir of the Premier
Cru of Ecueil.
Tasty
balance, highlighted by sensual woody notes obtained by the ageing
for 5 months of 30% of the base wines in oak barrels from the Ecueil
forest.
Deliciously
acidulous finish, punctuated by soft spices.
Remarkable
length on the palate.
For
this cuvée Ellipse 2014 - Blanc de
Blancs - Extra Brut, Emilien Allouchery was able to accompany with sensitivity,
without using herbicide and insecticide, grapes from vines with cultivated
soils, to vinify them without enzyme adding and settling and sign a touching
champagne.
To taste from aperitif to meal, with sea bream fillets and citrus
fruits, for example.

studying in Champagne and Burgundy and after a solid experience in New Zealand
and South Africa, presides over the destiny of the Champagne house
Allouchery-Perseval since 2006. Driven by the real desire to reduce the
environmental footprint, he cultivates with care the 22 plots of the
8 hectares wine estate, in Ecueil, certified High Environmental Value and
Sustainable Viticulture in Champagne. A gentle and accurate œnology gives birth
each year to around 60,000 bottles of highly expressive champagnes.
